The latest Cornish Times Recipe of the Week comes from food stylist and recipe writer Lola Milne and is for Tomato, Lentil and Aubergine Ragu.

Lola, who features it in her latest cookbook entitled Take One Tin, says it is a warming dish perfect for winter and adds that, with a nod to traditional Italian meat ragu, it is based on the tomatoey lentils that her aunty Sophie used to serve on family visits in her childhood.

Instead of the meat Lola has added soft aubergine, and she says she likes it best served with soft polenta and wilted greens, though you can choose whatever accompaniment takes your fancy.
