This week’s Cornish Times Recipe of the Week is for Chicken with Wild Mushrooms, Pumpkin and Sage Butter and comes from food writer extraordinaire Diane Henry.

Diane features the dish in her new cookbook, entitled From the Oven To The Table: Simple Dishes That Look After Themselves.

Although the recipe suggests using chicken thighs, Diane says that it’s just as good with a mixture of thighs and drumsticks, and she adds that it tastes extra lovely if you add a generous handful of grated parmesan or pecorino cheese sprinkled on the top a quarter of an hour before the end of the cooking time.
