This week’s Cornish Times Recipe of the Week is a taste of Persian cooking and is for Kale and Cabbage Kuku with Pine Nuts.

It comes from British-Iranian chef Sabrina Ghayour’s new cookbook entitled Bazaar: Vibrant Vegetarian Recipes. She says that if you’ve not heard of kuku, it’s a bit like a frittata (or Spanish omelette) which is a healthy staple in Iran and packed with green herbs or veg.

In her recipe, which you can read in this week’s Cornish Times, in shops from today (Friday), she has given this Persian classic a British twist.
