This week’s Cornish Times recipe of the week comes from Great British Bake Off winner turned TV presenter and cookery writer Nadiya Hussain.

She says that her Ras Malai Cake, which she features in her current BBC2 TV series and accompanying cookbook entitled Time To Eat, is inspired by a classic dessert from Bengal, India, where pieces of cake float in spiced milk.

Her pretty sponge cake recipe lacks the floating but she describes it as ‘rich, creamy and lightly spiced and fragrant’, and adds that it’s a great showpiece to serve if you’re entertaining visitors.
