AN increasing number of people are adopting a plant-based diet at the moment – so what can you serve up to vegan guests or family members for Christmas dinner other than that ’old chestnut’, the nut roast?

Well, we have a possible answer with this week’s festive Cornish Times recipe, which comes from the book Vegan Christmas by chef Gaz Oakley, aka the Avant-Garde Vegan.

He says his stuffed squash roast dish also makes a perfect centre-piece for the Christmas table. He explains: 'It’s so flavoursome and I think it looks beautiful as well, which is what you want on a Christmas table.’
