The latest Cornish Times Recipe of the Week is for Healthy Baked Scampi and comes from chef Chris Bavin, also co-presenter of TV show Eat Well For Less.

He includes the recipe in his cookbook Fakeaway and explains that scampi is traditionally made with langoustines, but today they are super-expensive, so he uses raw king prawns in his recipe instead. He adds a little bit of coconut to add a bit of extra sweetness and interest to the scampi, though this is not essential

He adds that his dish can be termed a ‘fakeaway’, because it looks and tastes like a takeaway but is prepared at home, so find out how to make it in this week’s Cornish Times, on sale from today (Friday).
