CELEBRITY Michelin chef Nathan Outlaw is set to open a training centre at Looe.

The centre is planned to be next to Looe's fish market and near Nathan's new restaurant, Outlaw's Fish Kitchen, which is due to open in a former fish processing unit in spring.

The chef, who runs two restaurants at Rock and one in London's Knightsbridge, plans to establish the training centre for the Academy Nathan Outlaw students and his own apprentices.

Last June Nathan launched his Academy at Cornwall College Camborne, signalling the start of a new partnership which has seen him taking an active role in the college's training of young chefs.

As part of their two-year studies, the Looe training centre students and apprentices will be able to broaden their experience under the guidance of head chef Paul Ripley, fish merchant Tim Alsop, and fish filleter Malcolm Moore.

They will be introduced to the whole fish cycle – from sea to plate – and, as well as cooking fish, they will gain experience of the sustainable fishing industry, as well as the art of being a fishmonger.

Nathan likes to develop growing talent from within and for the past three years has employed two apprentices each year. Most of his current team of chefs studied at Cornwall College, and academy students and apprentices have the opportunity to work at the Rock restaurant during their Cornwall College studies.

A statement on Nathan's blog says: 'Looe has the huge advantage of being a rather picturesque place to learn. We are all very excited about the future of this centre as a base for training for the next generation of chefs that have a deep passion for, and knowledge of seafood.'
