This week’s Cornish Times recipe is for Roasted Sweet Potato Tagine and is from vegan YouTube bloggers Henry Firth and Ian Theasby aka BOSH!
The dish features in their new book BISH BASH BOSH! and they say it is sweet, fragrant and easy to make. Although their suggested way to serve it is with couscous, they say it is also great with salad for a lighter lunch.
