This week’s Cornish Times recipe of the week is for Stuffed Curried Aubergines and comes from celebrity chef Jamie Oliver, a man much in the news at the moment.
Jamie says he wrote the recipe for his stuffed curried aubergines with spicy tamarind and peanut sauce eights years ago but he says it’s a game-changer for midweek cooking so he’s included it in his new cookbook entitled Veg.
