This week’s Cornish Times Recipe of the Week comes from Michelin-starred celebrity chef Tom Kerridge and is for Malaysian-style Beef Curry.
He includes the recipe in his new Lose Weight & Get Fit cookbook and says: ‘Here, galangal, tamarind and lemongrass introduce more subtle flavours than the often fiery heat of a classic Indian curry.’
He suggests serving it with brown rice, a handful of coriander leaves and finely sliced red chillies, and adds that it is suitable for home freezing in portions.
