This week the Cornish Times has two simple vegan recipes from cookbook author Miguel Barclay.
The recipes are for Singapore Noodles with Cashews, and Sweetcorn and Courgette Fritters and come from his latest publication, Miguel Barclay’s Vegan One Pound Meals: Delicious Budget-friendly Plant-Based Recipes All For £1 Per Person.
The Singapore Noodles recipe uses cashews cut lengthways to replace the original dish’s prawns, while Miguel says that the Sweetcorn and Courgette Fritters are ideal for a vegan brunch.
