The latest Cornish Times Recipe of the Week is for Rescue Noodle Soup and again comes from chef, food writer and Fairtrade champion Melissa Hemsley, who features it in her Eat Green cookbook.
Melissa explains that if she has had a roast chicken on a Sunday, she uses the leftovers to make this soup the next day and adds to it sore cupboard and freezer ingredients such as frozen peas, onion, garlic and carrots.
She adds: ‘There’s nothing quite like a gaming bowl of homemade soup to make you feel a thousand times better’.
