This week’s Cornish Times recipe is for Andalusian Pork Ribs with Almonds and Coriander and comes from chef and cookbook author Ben Tish.

His latest book, entitled Moorish: Vibrant Recipes From The Mediterranean, builds on the culinary legacy left across |beria by the Moors – medieval Muslims who ruled much of Spain and Portugal until the 15th century.

He says: ‘Ribs, like many of the cheaper, tougher cuts of meat, require some work to bring out the best in them, but the results are always rewarding and, as in this recipe, often stunning.’
