This week’s Cornish Times Recipe of the Week is for Sweet and Sour Albacore, Radicchio and Hazelnuts and comes from Australian chef Josh Niland, who runs the 30-seat Saint Peter restaurant in Sydney.
He includes the recipe in his new publication The Whole Fish Cookbook: New Ways To Cook, Eat and Drink, and says that it was one of the first dishes he put on the menu as a young chef first starting out. However, he says: ‘I am still as proud of it now as I was 12 years ago.’
He adds that if you can’t get albacore (longfin tuna), yellowfin tuna, bonito or blue mackerel are all great alternatives.
