This week’s Cornish Times Recipe of the Week comes from food writer and Russian cookery book author Alissa Timoshkina and is for Beetroot Patties with Horseradish Cream.

Alissa, who features the recipe in her new book Salt & Time: Recipes From A Russian Kitchen, says that these patties were often eaten in her family as an after-school snack and a bundle of vegetable patties made the walk home from class in freezing Russian winter temperatures much more bearable.
