The latest Cornish Times Recipe of the Week is for Seafood and Seaweed Chowder and comes from The Irish Cookbook by Jp McMahon.
Jp is a chef, restaurateur and culinary director of the EatGalway Restaurant Group, which comprises Aniar, Cava Boedga, and Eat Gastropub in the Irish west coast city of Galway.
With St Patrick’s Day approaching soon on Tuesday, March 17, he says that he gives his ‘classic Irish fish soup a little twist with the addition of seaweed’ – in this case dried kelp or kombu and also finely-milled nori – the Japanese name for a type of seaweed – as a garnish. There’s cider in it too.
So give this taste of the Emerald Isle a go and follow the recipe in this week’s Cornish Times, in shops from today (Friday).
