This week the Cornish Times Recipe of the Week is for Chilli Dhal Fritters and comes from cookbook author Selina Periampillai, who was born in the UK to parents from the tropical republic of Mauritius in the Indian Ocean.

The recipe comes from Selina’s new book entitled The Island Kitchen: Recipes From Mauritius And The Indian Ocean, which also contains a recipe for a green chilli chutney which she says is ideal for dipping the fried fritter balls in. Alternatively, she suggests doing what the locals do in the multi-ethnic and multilingual island, which was ruled by the Dutch, then the French and latterly the British before independence in 1968, and eat the fritters – often known there as ‘gateaux piments’ – crushed inside a baguette.
