THIS week’s Cornish Times recipe comes from 2014 Great British Bake Off semi-finalist Chetna Makan, who has her own popular YouTube channel, Food With Chetna.
Born in Jabalpur in central India and a former fashion designer in Mumbai, she moved to the UK in 2003.
Her recipe for Barley with Vegetables and Peanuts comes from her latest cookbook, Healthy Indian, and she describes the dish as crunchy, zingy and filling. She adds that it is packed with colour and flavour and not only makes a great sit-down meal dish but is also great for packed lunches.
