This week’s Cornish Times recipe of the week is for Chickpea Traybake and comes from nutritionist Rosemary Ferguson of the Strong Roots food range.

She says that it is a dish super high in fibre, which is great for digestive support and the gut. She adds that it is also rich in antioxidants from the squash and sprouts it contains, helping the skin, immune system and to balance inflammation. The chickpeas themselves are a wonderful source of plant protein, helping to control blood sugar levels.
